If I use quicktime & perian, it's completely stable and runs at an appropriate speed, but you have to wait for the godammn caching. It loads it bit by bit, and if you try to play while it's doing this, it chops up and slows down. The wait is way too long when you have 9GB 1080p mkv file waiting to cache. You can't also control subtitles and a lot of other stuff too.
